Respect and balance

Wine is the ultimate goal, and for it to be beautiful and authentic, it must come from a culture and a process that respects the whole. That's my philosophy.
That is why it was unthinkable for me not to include my entire vineyard and land in a responsible and ecological approach.
Respecting nature, including in the cultivation of a crop, is the guarantee that it will reward you in kind.
Limiting the impact of our culture, drawing inspiration from living things, returning to nature soils that were once overexploited.
The best way to combat the imbalance that leads to the appearance of vine diseases and pests is to limit and avoid the use of inputs and disturbances. Find and use natural alternatives to replace them and preserve the environment.
The estate, from its first year and in its entirety, was converted to organic farming and aware that this is the minimum, other even more advanced techniques in the approach will be undertaken such as Biodynamics, no tillage, agroforestry and the presence of animals.
Many animals share life on the estate (chickens, sheep, donkey...).
A preserved terroir and fruit are essential for their expression!
Logically, the harvest will be done manually, guaranteeing quality (no crushing, whole bunches...) and no destruction (vines/soils) linked to the machine.
Indigenous yeasts, naturally present on the skin of the grapes, will trigger the winemaking process.
